Roasted to a true southern Italian style, Our Italian has an immense depth, In the North of Italy, along Italy's Alpen border with Austria coffee is roasted as light a cinnamon. As you move South to Rome the beans become more like a chestnut brown in color, and South of Naples, the Italian roasting tradition becomes darker and darker. Cross over to Sicily, and the roast is a glistening ebony. Because the first substantial Italian community in New York was Sicilian we New Yorkers thought all Italy roasted "black," and so the bean color our new customers wanted was, "Italian" to us.
